Why Goat Meat Has a Strong Odor and How to Eliminate It

by | Jun 8, 2025 | ARTIKEL, Update

Goat meat is known as a delicious ingredient that many people enjoy, especially during special occasions like Eid al-Adha. However, it’s not uncommon for goat meat to have an unpleasant strong odor which can reduce appetite. So, what actually why goat meat has a strong odor? And how can you handle it to keep the meat fresh and tasty?

What Is the Unpleasant Odor in Goat Meat?

The smell is a distinctive, sharp, and pungent odor found in goat meat that some people find unpleasant. This smell often appears in meat from young goats or female goats, but it can also result from poor storage and processing.

Causes of the Odor in Goat Meat

To help clear your confusion, here are some common reasons why goat meat has a strong odor:

1. Age and Type of Goat

Meat from young goats or female goats tends to have a stronger prengus smell than adult male goats. This is due to hormonal and metabolic factors that can produce substances responsible for the distinct odor.

2. Slaughtering and Handling Process

Improper slaughtering or inadequate cleaning can intensify the odor. Residual blood or waste on the meat can also contribute to the unpleasant smell.

3. Improper Storage

If the meat is not stored in a cold environment right away or is left at room temperature too long, it may spoil quickly. Bacteria that develop during this time produce compounds that cause the prengus and other foul odors.

4. Animal Feed and Environment

The goat’s diet—especially if it includes certain types of grasses—or its living conditions (like near dirty pens) can influence the aroma of the meat.

How to Eliminate the Odor in Goat Meat

Here are some effective ways to reduce or eliminate the odor from goat meat:

1. Soak in Salt Water or Lime Juice

Before cooking, soak the goat meat in salt water or lime juice for 30 minutes to an hour. This helps neutralize the odor and refresh the meat.

2. Use the Right Spices and Herbs

Spices like ginger, bay leaves, lemongrass, and galangal not only add flavor but also help minimize the prengus smell. When making dishes like gulai or tongseng, be sure to use enough aromatic herbs.

3. Choose Quality Goat Meat

Buy your goat meat from a trusted seller who uses proper slaughter and handling techniques. Look for fresh, red-colored meat that’s not slimy.

4. Store Meat in a Cool Temperature

After purchase, refrigerate or freeze the goat meat immediately to prevent spoilage and odor. Proper storage ensures the meat stays fresh longer and odor-free.
