by | May 26, 2025 | ARTIKEL, Update

Have you ever cooked meat or chicken, but it turned out just so-so, with the seasoning only sticking to the surface? Well, it might be because you haven’t discovered this one technique yet. Yup, it’s called marination. This technique is often used by chefs to make sure the seasoning soaks deep into the food. But what is marination and how does it work?

If you’re curious and want to learn this technique to take your cooking to the next level, keep reading until the end! Here, Minchef will break it all down, from the definition to the ingredients used, to help you create dishes that are more tender, flavorful, and absolutely mouthwatering!

What Is Marination?

Marination is the process of soaking food, usually meat, chicken, or fish, in a mixture of seasonings for a certain period of time. The goal? Not just to add deeper flavor, but also to tenderize the texture of the meat and make it more delicious when cooked. This technique is commonly used before grilling, roasting, or frying food.

Types of Marination

Each type of marination has its own specific technique. Here are some commonly used methods:

1. Wet Marination

This is the most common method, where food is soaked in a mixture of ingredients. The mixture typically includes oil, an acidic component (like lime juice or vinegar), and a variety of spices and seasonings.

2. Dry Marination (Dry Rub)

In this method, food is coated directly with a mix of dry spices without adding any liquid. Dry rub is ideal for dishes that will be grilled or roasted.

3. Enzymatic Marination

This method uses natural ingredients that contain meat-tenderizing enzymes, such as pineapple, papaya, or kiwi. It’s highly effective in shortening marination time, but needs to be done carefully to avoid overly soft meat.

Common Ingredients Used in Marination

The combination of ingredients in a marinade can be adjusted according to taste and the type of dish being prepared. Here are some commonly used components:

1. Acidic Ingredients (vinegar, lime, and similar)

Acid helps break down the proteins in meat, making it more tender. Common acidic ingredients include vinegar (balsamic, apple cider, wine), lime, lemon, and yogurt.

2. Oil

Oil acts as a flavor carrier and helps the spices and herbs penetrate the food. It also helps retain moisture during cooking. Suitable oils for marination include olive oil, canola oil, and sesame oil.

3. Spices and Herbs

These are key to adding aroma and a distinct taste to the marinade. Examples include garlic, ginger, paprika, oregano, rosemary, thyme, and various types of pepper.

4. Additional Ingredients

Ingredients like honey, soy sauce, oyster sauce, and brown sugar can add sweetness and umami depth to the marinade.
