Every region in Indonesia has its own unique culinary characteristics, and one thing that almost always appears on the dining table is sambal. Not just a side dish, sambal often determines whether a meal tastes extraordinary or just ordinary. Interestingly, there are so many types of sambal in Indonesia, each with distinct flavors and ways of serving. Types of Sambal in Indonesia 

Here are some popular types of sambal in Indonesia that you must try because of their unique flavors: 

1. Sambal Terasi 

Sambal terasi is probably one of the most widely known sambals throughout Indonesia. This sambal is made from chili peppers, shallots, garlic, salt, sugar, tomatoes, and of course, terasi (fermented shrimp paste) that is first roasted. The savory taste and distinctive aroma of terasi make this sambal perfect to pair with raw vegetables, fried fish, or tempe penyet. 

2. Sambal Bajak 

Sambal bajak originates from Central and East Java. Unlike regular sambal, sambal bajak is cooked by sautéing in oil, giving it a sweeter, richer flavor and less spiciness. Its color is deep red and the texture is smoother. It is usually served alongside fried chicken, tofu, or tempeh. 

3. Sambal Matah 

This Balinese sambal is quite unique because it is not cooked but served raw. Its ingredients consist of sliced bird’s eye chili, shallots, lemongrass, kaffir lime leaves, and coconut oil. It tastes fresh and aromatic, making it a perfect accompaniment to ayam betutu (Balinese spiced chicken) or grilled fish. 

4. Sambal Dabu-Dabu 

If you like sambal with a fresh and tangy taste, sambal dabu-dabu from Manado might be your favorite. This sambal is made from sliced bird’s eye chili, shallots, tomatoes, lime juice, and a bit of cooking oil. It’s perfect for seafood like grilled rica-rica fish. 

5. Sambal Ijo 

As the name suggests, this sambal is green because it is made from large green chilies and green bird’s eye chilies. This Minang-style sambal is usually coarsely ground and sautéed with shallots, garlic, and green tomatoes. Sambal ijo is not as spicy as red sambal but still very appetizing, especially when served with nasi Padang. 

6. Sambal Bawang 

This sambal is quite simple but addictive. It is made from red bird’s eye chilies and garlic that are fried then ground together with salt. Sambal bawang is popular as a complement to ayam geprek, because its spiciness hits you immediately with the first bite. 

7. Sambal Tomat 

If you want sambal with a spicy flavor that is not too strong, sambal tomat can be the right choice. Tomatoes cooked together with chili and shallots create a balanced sweet and sour taste. It’s perfect to enjoy with fried snacks or various side dishes.
