Meltique beef is a type of standard beef that’s specially processed to achieve a tender, juicy texture similar to premium cuts like wagyu or angus. Meltique beef is created by injecting fat into the meat fibers, producing a marbling effect (fat pattern) often seen in wagyu. 

This technique takes inspiration from a traditional French cooking method called “pique,” where fat and specific spices are injected into plain meat using special needles. 

Through this fat-injection process, regular beef transforms in texture and flavor to resemble wagyu. However, it’s important to note that this process does not turn regular beef into authentic wagyu – it only mimics its characteristics. 

This technique also allows producers to use any part of the cow for meltique, not limited to expensive cuts like tenderloin or ribeye. As a result, meltique beef can be produced more affordably, making it much cheaper than premium beef that requires specific cuts. 

Why is Meltique Beef More Affordable? 

There are several reasons why meltique meat is more affordable. Here are the reasons why meltique meat is more affordable:

1. No Need for Specific Cuts of Beef 

The fat injection technique is practical and efficient, allowing various parts of the cow to be used without needing premium cuts. This saves production costs and makes meltique beef more affordable.

Unlike wagyu, which requires special cattle and intensive care, meltique can be produced from regular cattle, making production more economical and less restricted to specific types. 

3. Mass Production Process 

Since the injection process is done on a large scale, the time and costs required to produce meltique beef can be minimized.

Is Meltique Beef Safe to Eat? 

The fat injected into the beef is a vegetable-based fat, such as canola oil. The injection process must adhere to food safety standards, ensuring the beef is safe for consumption when eaten in moderation. 

However, those on a diet or needing to be careful with food choices should be aware that due to the injected fat, meltique beef contains more fat than regular beef.
