Mashed potato: Into a pan, add all of mashed potato ingredients except butter and parsley. Cook until the texture becomes thicked and fully cooked.
Once done, remove from the heat. Add butter and stir until evenly mixed. Sprinkle with chopped parsley.
Chicken : Marinate the chicken with salt, black pepper, chopped garlic, Italian herbs, and FiberCreme. Rub the mixture all over the chicken and set aside.
Heat some oil in a non-stick pan, pan-fry the chicken on both sides until golden brown.
Sauce : Heat butter in a non-stick pan. Sautee onion and garlic until caramelized. Add mushroom, continue sauteing until fragrant and cooked.
Add water, salt, pepper, and chicken stock powder. Cook until done, then add the flour mixture and FiberCreme. Stir until well combined.
Arrange chicken and mashed potato on a serving plate. Serve it along with the sauce and a sprinkle of chopped parsley.
