East Javanese Lodeh Recipe, Authentic Flavor Without Coconut Milk

Sayur lodeh is one of Indonesia’s traditional dishes, known for its rich coconut milk soup and an abundance of vegetables. This dish has many versions across various regions, reflecting the rich culinary culture of the Indonesian archipelago. From Java and Sunda to Sumatra, each area has its own unique take on sayur lodeh in terms of taste, color, and additional ingredients. However, one thing remains almost constant: lodeh soup is typically made with coconut milk to create its signature creamy flavor. 
One popular version is East Javanese sayur lodeh. This version is distinct for its use of young jackfruit as one of its main ingredients. The tender young jackfruit, along with chayote and long beans, adds a wonderful texture, flavor, and additional nutritional value. The combination of spices and coconut milk further enhances the flavor of this East Javanese lodeh.

Bahan
  

  • 20 gr FiberCreme
  • 100 gr Young Jackfruit, Chopped and Half-Boiled 
  • 100 gr Chayote, Cut Into Matchsticks
  • 8 pcs Long Beans, Cut Into Pieces
  • 1 pcs Red Chili, Sliced
  • 1/4 tsp Ground Coriander
  • 1 tsp Salt
  • 1/2 tsp Ground Black Pepper
  • 1 tsp Mushroom Broth Powder
  • 2 tbsp Cooking Oil, for Sautéing
  • 600 ml Water

For Sautéing

  • 4 pcs Shallots, Sliced
  • 2 pcs Garlic Cloves, Sliced
  • 3 cm Galangal, Sliced
  • 1 cm Aromatic Ginger, Sliced
  • 2 bay Leaves

Cara Membuat
 

  • Sauté the shallots, garlic, galangal, red chili, kencur, and bay leaves until fragrant
  • Add water and bring to a boil
  • Add the young jackfruit, chayote, and long beans
  • Add salt, ground coriander, black pepper, mushroom broth powder, and FiberCreme. Stir well and cook until done
  • Ready to serve
